What's for dinner?

People always ask me what I fix for dinner on a “normal” night.  Tonight's dinner consisted of:  shredded rotisserie chicken (bought from Ingles), chopped onion sauteed with taco seasoning, Uncle Ben’s Mexican blend rice in a microwave pouch  all cooked together in a skillet, then piled on a tortilla with tomato, lettuce, salsa, sour cream and cilantro. And Tabasco. Ta-da!  Sierra chopped, Daniel cooked (while I wrote: deadline for the Greenville Journal)... 
and I ate!
